Biodynamic since 1991, they're well established archetypes of Burgundian natural winemaking. A rich, fully ripe wine with honeyed, ginger tones from Botrytis (think Sauternes) prevalent to the area. Some winemakers shy away from the botrytis but Guillemot Michel instead lean in, and having made this wine for 41 years, they've mastered it.
